  • 1 unit bell pepper, sliced Red or yellow varieties add extra sweetness.

Preparation

  • Place the chicken breasts in the crockpot, ensuring they fit snugly.
  • In a bowl, mix together the pineapple chunks (juice included), soy sauce, brown sugar, garlic, and ginger.
  • Pour the mixture over the chicken, ensuring all pieces are coated.
  • Add the sliced bell pepper on top.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  • Once done, shred the chicken in the sauce and mix well.
  • Garnish with green onions and serve with rice or noodles.

Notes

For best results, marinate the chicken in the sauce for an hour before cooking. Feel free to experiment with additional veggies like broccoli or snap peas, and consider adding red pepper flakes for a spicy kick.
