  • 1/2 cup heavy cream Full-fat is best for creaminess.
  • 1/2 cup fresh raspberries Use the juiciest, reddest ones available.
  • 1 teaspoon vanilla extract Elevates flavor profile.
  • to taste cocoa powder or chopped nuts for coating Use your favorite for coating.

Preparation

  • In a medium saucepan over medium heat, pour in your heavy cream. Heat until tiny bubbles start appearing around the edges, just at a simmer.
  • Remove from heat and add the chopped dark chocolate, stirring gently until completely melted and smooth.
  • Fold in the fresh raspberries and vanilla extract until well combined.
  • Refrigerate the mixture for about 30 minutes until it thickens slightly.
  • Scoop out small portions of the truffle mixture and roll them into balls.
  • Roll each truffle in cocoa powder or chopped nuts to coat.
  • Place the truffles on a lined baking sheet and refrigerate until firm.
  • Serve chilled and enjoy!

Notes

Don’t rush the chilling process for best results. Use quality chocolate for optimal flavor. Experiment with flavor combinations like sea salt on top.
