For the soup

  • 4 cups vegetable broth Heart of the soup; low-sodium recommended.
  • 1 can (14.5 oz) diced tomatoes Adds acidity and depth.
  • 1 cup green beans, trimmed and cut Adds nutritious crunch.
  • 1 cup corn (frozen or fresh) Adds sweetness.
  • 1 teaspoon dried thyme Herb that ties the flavors together.
  • 1 teaspoon dried basil Adds an Italian flair.
  • Salt and pepper to taste Essential for seasoning.
  • 2 cups spinach or kale, chopped For extra nutrients and color.

Instructions
 

Preparation

  • Heat the olive oil over medium heat in a large pot.
  • Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until softened.
  • Stir in the minced garlic and sauté for another minute until fragrant.

Cooking

  • Pour in the vegetable broth and add diced tomatoes, green beans, corn, thyme, basil, and a sprinkle of salt and pepper.
  • Bring to a gentle boil and then reduce the heat to let it simmer for about 20 minutes.
  • Add the chopped spinach or kale and cook for another 2-3 minutes until wilted.
  • Adjust the seasonings and serve warm.

Notes

This soup can be customized with seasonal vegetables and can be made spicy by adding red pepper flakes. It freezes well for future meals.
