  • 1 cup whipped topping Use stable, vegetable-based for best results.
  • 1 cup vegetarian mini marshmallows Keep recipe suitable for more diets.
  • 1 cup cottage cheese Small-curd for a smoother mouthfeel.
  • 2 tablespoons sugar White granulated sugar for maceration.
  • 1 teaspoon vanilla extract Enhances flavors without being overpowering.

Instructions
 

Preparation

  • Wash and pat the peaches dry. Dice into roughly 1/2-inch pieces.
  • Toss the diced peaches with sugar and vanilla in a mixing bowl and let sit for 10-15 minutes to macerate.

Prep the Dairy and Marshmallows

  • Use chilled cottage cheese from the fridge. Fluff the whipped topping with a spatula.
  • Measure vegetarian mini marshmallows.

Combine

  • In a large bowl, mix peaches (with juices), whipped topping, marshmallows, cottage cheese, sugar, and vanilla.
  • Gently fold the ingredients together with a rubber spatula without crushing the marshmallows.

Chill

  • Cover and refrigerate for at least 1 hour before serving.
  • Gently stir after chilling if it looks watery.

Serve

  • Scoop into a large bowl or individual cups. Optionally garnish with a thin peach slice or granola.

Notes

Let it sit for at least an hour for best flavor. Use ripe peaches for maximum sweetness. Can make ahead and store for up to 3 days.
