Instructions
 

Preparation

  • Rinse the shrimp under cold water, pat dry, and set aside.
  • Dice the cucumber, chop the green onions, and roughly chop the herbs.

Mix Salad

  • In a large bowl, combine shrimp, diced cucumber, chopped green onions, and herbs.

Make Dressing

  • In a separate bowl, mix Greek yogurt, lime juice, salt, and pepper.
  • Adjust lime juice to taste, adding more for a zesty flavor.

Combine and Chill

  • Pour the dressing over the shrimp and cucumber mixture, tossing gently to combine.
  • Chill in the refrigerator for at least 30 minutes.
