  • 1 cup rice Long grain works best; white or brown.
  • 4 cups chicken broth Choose low-sodium for a better flavor.
  • 1 cup heavy cream Can substitute with coconut cream.
  • 1 unit onion, chopped Yellow onion recommended for sweetness.
  • 2 units carrots, diced Add sweetness and color.
  • 2 units celery stalks, diced Provides crunch and depth.
  • 2 cloves garlic, minced Fresh garlic preferred for flavor.
  • to taste salt and pepper Essential for flavor enhancement.
  • for garnish unit fresh parsley Adds color and fresh flavor.

Preparation

  • Sauté the onion, carrots, and celery over medium heat in a large pot with olive oil until soft, about 5-7 minutes.
  • Add the minced garlic and cook for an additional minute.
  • Stir in the chicken broth and bring to a boil.
  • Add the rice and cooked chicken; reduce the heat and let it simmer until the rice is tender, about 15-20 minutes.
  • Stir in the heavy cream and season with salt and pepper.
  • Serve hot, garnished with fresh parsley.

Notes

Use quality broth for the best flavor. Can substitute chicken with shredded tofu or chickpeas for a vegetarian option.
