  • 1 cup Grated Parmesan cheese This sharp cheese contributes a savory depth. Use freshly grated if possible.
  • to taste Salt and pepper Enhances the flavors. Start small; you can always add more.
  • optional Chopped parsley for garnish A sprinkle of green adds vibrancy and is a nice color contrast.

Preparation

  • Cook the egg noodles according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, melt the butter over medium heat.
  • Add the heavy cream to the skillet and bring to a gentle simmer, stirring occasionally.
  • Stir in the grated Parmesan cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Add the cooked noodles to the cream sauce and toss to coat evenly.
  • Serve immediately, garnished with chopped parsley if desired.

Notes

To truly nail this dish, don’t skip salting the pasta water, use block Parmesan instead of pre-grated, and gently simmer the cream to avoid curdling.
