Ingredients
  

For the soup base

  • 2 cups broth (chicken or vegetable) Organic chicken broth is preferred, but vegetable broth works well too.
  • 1 cup diced vegetables (carrots, celery, onions) Customize with any fresh vegetables you have.

Protein and starch

  • 1 can beans (any variety) Chickpeas are recommended for creaminess, but any beans will work.
  • 1 cup pasta or rice Orzo or small shells are great choices; brown rice or quinoa can be used as alternatives.

Seasoning and toppings

  • 1 teaspoon dried herbs (thyme, oregano) Can substitute with fresh herbs or add chili flakes for spice.
  • Salt and pepper to taste Add at the end to avoid over-seasoning.
  • Grated cheese for topping (optional) Sharp cheddar or mozzarella recommended.

Preparation

  • Heat the broth in a large pot over medium heat until gently simmering.
  • Add diced vegetables and sauté for about 5 to 7 minutes until they soften.

Cooking

  • Introduce the drained beans and the chosen pasta or rice, along with dried herbs, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat and let simmer for 10 to 15 minutes or until the pasta or rice is cooked.

Serving

  • Ladle the soup into bowls and top with grated cheese if desired.

Notes

Can be prepared ahead of time. Leftovers can be stored in the fridge for 3-4 days. Reheat gently and add a splash of broth if it thickens too much.
