Chicken Teriyaki Noodles

Main Ingredients

  • 2 pieces boneless, skinless chicken breasts Slice thinly for quicker cooking.
  • 8 oz noodles (lo mein or ramen) Any noodle type can be used.
  • 1 cup teriyaki sauce Choose a good quality brand.
  • 1 tablespoon vegetable oil For cooking.
  • 2 cloves garlic, minced Adds flavor.
  • 1 cup mixed vegetables (bell peppers, carrots, and broccoli) Feel free to add any veggies.
  • to taste Green onions for garnish Adds freshness.
  • to taste Sesame seeds for garnish Adds a crunchy texture.

Instructions
 

Preparation

  • Prepare the noodles according to the package instructions. Drain and set aside.
  • In a large skillet, heat the vegetable oil over medium heat.
  • Add the minced garlic and cook until fragrant, about 1-2 minutes. Do not let it brown.

Cooking

  • Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  • Remove the cooked chicken and let it rest for a minute before slicing it against the grain.
  • In the same skillet, add the mixed vegetables and stir-fry for about 3-4 minutes until tender.
  • Return the sliced chicken to the skillet and pour the teriyaki sauce over it. Stir to combine.
  • Add the cooked noodles and toss until everything is well-coated with the sauce.
  • Serve hot, garnished with green onions and sesame seeds.

Notes

Prep your veggies and chicken in advance to cut down on cooking time. Adjust the sauce thickness if needed using a cornstarch slurry.
