  • 4 pieces eggs The star of our show! Eggs are an excellent source of protein.
  • 4 pieces small flour tortillas (6-inch) These serve as the cozy wrap around our delicious filling.
  • 4 slices bacon (or 4 Tbsp Bacon Bits, divided) Crispy and savory, adds an umami punch.
  • 1 cup cheddar cheese (grated) The melty goodness that binds everything together.
  • 8 TBSP canola oil (divided) For that golden exterior while cooking.

  • Crack the eggs into a bowl. Whisk them lightly, adding a pinch of salt and pepper.
  • In a frying pan over medium heat, add a splash of canola oil—about 2 tablespoons. Once warm, pour in the eggs and gently scramble until just cooked through.
  • In another pan, heat up the remaining oil and fry the bacon strips until crispy. Chop the bacon into small pieces.
  • On one half of a tortilla, layer on scrambled eggs, crispy bacon, and grated cheddar. Fold the tortilla over, making a half-moon shape.
  • Cook the folded quesadilla in the hot pan for about 2-3 minutes on each side until golden and crispy.
  • Repeat the process until all quesadillas are cooked. Slice each quesadilla into wedges and serve hot.

Notes

For best results, serve with salsa or sour cream. You can customize fillings with various veggies or proteins.
